Chef Gianni Caruso brings an authentic Italian approach to the Spiga kitchen with 30 years of hands-on experience in making fresh pasta, homemade sauces, skilled butchering, saute and grilling. His combined experiences in diverse Italian, English, and American kitchens allow him to boast an impressive list of accolades including the Award of Excellence by Wine Spectator and Featured Chef recognition by the Foxwoods Food and Wine Festival.
As an Italian native born in Abruzzo, Italy, Caruso has first-hand knowledge of traditional Italian cuisine. His culinary excellence has achieved international merit, having been trained in elite Italian and English kitchens before moving to the United States in the 1990’s to make his mark on Boston.
Caruso completed his formal study at the prestigious Culinary Institute of Roccaraso, Italy. Following his studies, he ventured from his family owned restaurant to London to pursue his dream of becoming a head chef at a world-renowned restaurant. Chef Caruso worked hard to learn and perfect his culinary skills to achieve the title of becoming the head chef at the venetian inspired restaurant Florian’s Cafe in the heart of London. His experience in London provided him with a full-range of culinary experience, which he credits for his well-rounded knowledge of exceptional cuisine.
Finding his place in Boston, Gianni worked at one of the North End’s finest fine dining restaurants, Bricco, where he soon took over the kitchen as Executive Chef.
He was brought on to DePasquale Ventures to breathe new life into Italian restaurants in the Boston area. This is an excellent showing of his kitchen management skills and agility as a distinguished chef.
